It’s that time of year we can officially eat our bodyweight in soup and this spicy sweet potato and carrot soup, I could definitely eat by the bucket load!

It was a bit of a random put together one Saturday in early autumn, it was a roaring success so thought I would share it.

Also, after seeing the popularity of my previous recipe for leek and potato soup, I couldn’t help but share this tasty number with you too.

Sweet potato and carrot soup can be a bit meh sometimes though, so to add a bit of a kick I’ve added smoked paprika and some chilli flakes. It gave the soup a subtle kick.

As ever, I used my trusty Morphy Richards soup maker which makes soup making a doddle. Just throw all the raw ingredients in the pot, select your preference for either chunky or smooth and away it goes.

Delicious soup in less than half hour.

Spicy Sweet Potato and Carrot Soup

A simple warming soup that is simple to make, particularly if you have a soup maker.

There is no need to pre-cook any of your ingredients, roasting your carrot and sweet potato for 20 minutes prior to putting into the soup maker would add extra depth, but for this particular soup, I opted for simple and quick!

This made enough for 3 large bowls of soup, adjust the ingredients if you want more or less soup.

Ingredients:

3 small sweet potatoes
3 small carrots
1 brown onion
1tsp of lazy garlic (or a crushed fresh clove)
1 vegetable stock cube
Boiled water (to the fill line of your soup maker)
1 tsp of smoked paprika
1 tsp of chilli flakes

To serve:
Spoon of creme fraiche (this helps take off the heat if you add too much chilli!)
Toasted pine nuts for crunch (optional)
Coriander leaf (optional)

Method:

  1. Peel and chop your sweet potato and carrots into bitesize chunks
  2. Finely dice the onion
  3. Add all ingredients into the soup maker adding in the water last to the fill line of your maker.
  4. I prefer a smooth soup so I chose the smooth setting
  5. Once ready, serve with warm crusty bread (you could make your own if you’re braver than I am!) and lashings of butter
  6. Enjoy!

This ended up being a lovely silky and smooth soup, the chilli added a nice kick but not so much you are reaching for the water. I didn’t add any cream to the main body of the soup to thicken it.

It added a bit of depth to the soup without eliminating the sweet flavours of the potato and carrot.
